Chicken Salad Ingredients
- 2 1/2 (2 large or 3 medium) pounds skin-on chicken breasts with bone
- 12 slices Pita bread
- 1/2 cup diced celery
- 1/2 cup slivered almonds, toasted
- Handful chopped fresh parsley leaves
- 1/2 cup thinly sliced roasted red pepper
- 1/3 cup thinly sliced red onion
- 12 slices cooked bacon
- 1 teaspoon Dijon mustard
- Freshly ground pepper
- 1 teaspoon granulated sugar
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
First, arrange the rack in the middle of the oven and then heat it to 425 °F. Keep the chicken on a rimmed baking sheet. Rub some olive oil on the chicken and season it with salt and pepper. Now roast the chicken until it is cooked through, for 30 minutes or so. The skin need not brown but make sure the meat is cooked through.
Now set the chicken aside and make it cook down. Shred the meat and discard the bones and skin. Keep about 3 1/2 or 4 cups of the shredded chicken. Now place it in a big bowl and drizzle the chicken with some juices to keep the pan moist. Now add the celery, parsley, almonds, onion, and red pepper.
For the Vinaigrette, you have to place the mustard, sugar, vinegar, salt, and pepper in a small bowl and whisk it to combine. While whisking continuously, pour some olive oil until it gets mixed. Trickle down the vinaigrette over the chicken salad and toss to coat it.
And for the sandwiches, take 6 slices of the pita bread and divide the chicken salad over the bread. Spread it into an even layer and top each sandwich with 2 slices of bacon, Now close the sandwich with the rest of the bread.
